Ferran Adrià and Andoni Luis Aduriz commit to comprehensive training in gastronomy at Madrid Fusión

Both chefs advocate a gastronomic university with cross-curricular teaching and knowledge, and endorse the success of MACC

Ferrán Adriá and Andoni Luis Aduriz arrived at Madrid Fusión to vindicate the gastronomic university, and certified that Madrid Culinary Campus, promoted by Comillas and Vocento, "is a worldwide project", as it is the first in the world to combine gastronomy, business management and knowledge in agronomy. Both are very involved in MACC and both are lecturers in the Degree in Gastronomy and Culinary Innovation, the dual degree in GGIC and Business Administration and Management, and the Master's Degree in Gastronomic Catering and the Mugaritz Creativity.

During the crowded talk in the Madrid Fusión auditorium, the chefs analysed "The disruptive future of academic training" in gastronomic issues. "The university should be a centre of thought: if you think well, you create and cook well," said Adrià. For his part, Aduriz stated that "creativity is contagious, which is why it is necessary to generate an ecosystem that promotes creation and knowledge in the gastronomic world".

This is where MACC comes in because "the university must make professionals think, so that they understand why they are going to do things, where they are, where they are going..., and it is a necessary ally for training in this sector, which until now has been very disordered". The alma mater of El Bulli recognises that "with Comillas we have all the ingredients to do a very important job... and now we have to do it".

Unique gastronomic training

MACC already teaches everything from how to set up a business to the history of cuisine and products, as well as management and communication, for which they already have up to 25 books from Bullipedia to work on science and cuisine projects.

The two chefs agreed that interdisciplinarity is key. And if there is anything in the world capable of bringing together multiple disciplines of knowledge, it is undoubtedly gastronomy. One of them is business management. "Only 10% of large restaurants have budget management. And 50% close in five years", Adrià recalled, so "with Comillas we can do a very important job that will help other SMEs, with a language that is understandable to small entrepreneurs". And he added: "management is crucial, and values, such as honesty and generosity, are very important: the principles we want our students to have, we have to have them ourselves".
